It was a morning in April 2020, in Lambesc, a charming village near Aix-en-Provence. Olivier, a passionate wine merchant, and Mathieu, a talented chocolatier, were much more than artisans with neighboring businesses. By force of circumstance and through discussions about their respective passions, they had become friends.
An unexpected revelation was going to change the course of things. Because Olivier, by his exploratory nature and his alert mind, had often ventured beyond the limits of the spaces reserved for the public in Mathieu's chocolate factory.
There, in the bowels of the workshop, he had discovered dozens of jute bags, weighed down by a mysterious material.
Curious, almost like a child in front of a hidden treasure, Olivier asked Mathieu: "What do these bags contain?" » Mathieu, with the simplicity of his usual gestures, replied: “They are the shells of cocoa pods, the shells of cocoa beans. Waste, nothing more. I even have to pay to get rid of them.”
Chapter 2: An idea born from the earth

This answer, although innocuous, aroused a deeper reflection in Olivier. His ecological sensitivity, his desire to give a second life to what seemed doomed, took over.
“Can I take a few bags?” he asked, almost timidly.
The idea was already germinating in his mind: to use these pod barks as mulch for his young plantations, a simple but meaningful gesture, intended to preserve the water in the earth.
The months passed, and summer slowly faded to make way for the first sweetness of autumn. But something unexpected happened in Olivier’s garden. L’idée d'une fusion entre les arômes naturels de cacao et la richesse du vin venait de naître, prête à donner naissance à Rouge Cabosse®.
Launched in October 2020, the first vintage was a real success, with 2,000 bottles sold. Today, Olivier and his team continue their quest for excellence to enhance this unique combination of wine and cocoa.
